DIANE'S TATO TACO CASSEROLE 
1 1/2 c. instant mashed potato flakes
8 oz. dairy sour cream
2/3 c. water

FILLING:

1 lb. ground beef
1 1/4 pkg. taco seasoning mix
3/4 c. water
4 oz. shredded Cheddar cheese

TOPPING:

1 c. shredded lettuce
1 c. chopped tomatoes
2 c. corn chips, slightly crushed

Combine crust ingredients. Press into 9 x 13 inch pan. Bake at 350 degrees for 20-25 minutes until golden brown. In skillet brown beef and drain well. Stir in taco seasoning mix and water - bring to a boil. Reduce heat and simmer uncovered for 15 minutes. Spread over baked crust - sprinkle with cheese. Bake 5 minutes or until cheese melts. Layer topping over cheese. Cut into squares. Serves 4 to 6.
