LAYERED TACO CASSEROLE 
1 lb. ground beef
2 tbsp. butter
1 med. onion, chopped (1/2 c.)
2 tbsp. diced green chilies
1 can tomato sauce (8 oz.)
1 pkg. taco seasoning mix
1/2 c. water
2 eggs
1 c. dairy half & half
1 pkg. corn chips
8 oz. Monterey Jack cheese, shredded
1 c. dairy sour cream
1/2 c. grated cheddar cheese

Brown ground beef. Combine butter, onions and chilies, tomato sauce, taco seasoning mix and water; let simmer for a few minutes. Beat eggs; blend in half and half. Add egg mixture slowly to tomato sauce, stirring constantly. Place half of the corn chips in a 2 quart casserole. Top with half the ground beef, half the cheese and half the sauce. Repeat the layers.

Microwave on HIGH for 15 minutes, rotating dish 1/2 turn after 8 minutes. Top with sour cream and grated cheese. Microwave on HIGH for 2 to 4 minutes until cheese is melted. Makes about 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
