AUNTIE'S HONEY DUCK | |
1 (4 lb.) duck 1 clove garlic 1 tsp. salt 1 orange peeled, sliced and quartered 1/4 tsp. powdered ginger 1/4 c. lemon juice 2 tbsp. honey 1/2 c. seedless grapes or small can of black cherries Quarter duck place it skin side up on a rack in a baking dish. Bake in a preheated 325 degree oven for 1 hour. Drain off the fat and arrange the duck in a casserole. Add garlic, salt, orange, ginger, lemon juice, and honey. Cover and bake for 30 minutes more. Add grapes (or canned cherries) and bake, uncovered, for 10 minutes more, or until done. |
