PARMESAN ZUCCHINI "BAKED" 
6 med. zucchini, unpeeled
1/2 c. water
3 tbsp. melted butter
1/3 c. freshly grated Parmesan cheese
Salt & pepper
Fresh dill, basil or parsley

Place zucchini into 1/2 cup boiling salt water. Cover and cook 10 minutes. Remove from pan, drain, cut in half lengthwise. Place in shallow baking dish, add salt, pepper and favorite herbs. Drizzle with melted butter. Top with Parmesan cheese. Bake at 375 degrees for 20 minutes.
