WEST COAST CHICKEN 
2 tsp. salt
1/4 tsp. black pepper
1 c. frozen orange juice concentrate, thawed
1/2 tsp. ground ginger
4 tsp. soy sauce
Vegetable oil for greasing pan
5 lbs. chicken thighs, skinned

Combine salt, pepper, orange juice concentrate, butter, ginger and soy sauce. Grease 2 (11"x7") baking pans well with vegetable oil. Place chicken in single layer in the pans. Baste well with sauce. Cover and refrigerate overnight. Bake, uncovered at 350 degrees for 60 minutes, basting with sauce once during cooking. 8 (4 oz.) servings.
