SPANISH RICE AND CHICKEN 
4 chicken breasts, skinless
1 c. long cooking rice
1 sm. can stewed tomatoes
1 tsp. ground cumino
1/2 tsp. garlic powder
1 sm. onion
2 tbsp. bacon grease
2 1/2 c. chicken broth

Brown 1 cup uncooked rice in bacon grease, stirring frequently. Add chopped onion to rice and cook for 3 minutes. Add stewed tomatoes, chicken broth, cumino and garlic powder and stir well. Simmer this mixture for 10 minutes. Add chicken breasts and continue to simmer for another 10 minutes or until chicken is done.
