ZUCCHINI CASSEROLE 
1/4 c. butter
1/2 tsp. garlic salt
1/8 tsp. pepper
1 tsp. mixed Italian seasoning
2 med. zucchini, cut in 1/2-inch slices
1 lg. onion, sliced
1 c. mushrooms (canned or fresh)
1 lg. tomato, cut into eights
3 tbsp. Parmesan cheese

Place butter and seasonings in deep 2 1/2-quart casserole. Heat in microwave on full power for 1 minute. Add squash, onions and mushrooms. Toss until all are coated with seasoned butter mixture. Cover tightly and heat on full power for 8 minutes. Add tomatoes and heat on full power for an additional 6 minutes, or until all vegetables are cooked. Add cheese and stir them.

Since microwave ovens vary in power, you may need to adjust your cooking time.
