AUNT MARIE'S CUCALATELLI
1/2 c. butter
1 lg. egg
3/4 c. sugar
2 c. flour
1 tsp. baking powder
3/4 or less tsp. salt
1 1/2 tbsp. orange juice
1 tsp. grated orange rind
1 tbsp. whiskey

Make soft dough - roll into strips 4 inches wide and 8 to 10 inches long. Spread with filling evenly, then roll like a jelly roll starring n the 10 inch side. Cut into 1 inch pieces. Bake at 350 degrees until bottoms are brown. Top cooked but not brown.

FILLING:

1 jar jelly (I use apricot)
1 jar mincemeat
1 lb. raisins (I use golden)
1 lg. figs - put through grinder
1 jar walnuts
1 jar candied fruit cake mix

Put all together in a large bowl. Add enough whiskey to moisten fruit and let stand 3 days - stirring occasionally.

ICING:

For icing use powdered sugar and enough whiskey to make a light icing. After cookie is cool smear a little icing on top and sprinkle some colored candy on top (optional).
