AUNT MARY'S FRESH APPLE CAKE 
2 c. sugar
1 c. oil
2 beaten eggs
1 c. chopped nuts
2 c. flour mixed with 1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
4 c. apples, peeled and diced

Blend all ingredients well. Bake in greased and floured 9 x 13 inch or bundt pan at 325 degrees for 1 hour. May be served with whipped cream.
