VEAL FLORENTINE EN CROUTE 
1 lb. ground veal
1/4 tsp. freshly chopped garlic
1/2 tsp. dried savory
1 tbsp. freshly chopped parsley
1/2 tsp. white pepper
1 tsp. salt
1/2 tsp. sugar
1/2 tsp. ground ginger
1 egg
4 crackers (Saltines)
2 tbsp. milk
Blanched spinach leaves
12 slices Provolone cheese
1/2 sheet puff pastry dough

Combine all ingredients except spinach, cheese and dough. Divide mixture into 6 equal portions. Wrap a spinach leaf around each portion, and wrap each portion in two slices Provolone. Place each portion on a piece of pastry dough and wrap like an envelope, sealing the corners. Decorate with leaves cut from remaining pastry. Brush with egg wash and bake in a 350 degree oven for approximately 30 minutes or until golden brown. Serves 6.
