HONEY BAKED BEANS 
2 c. dried beans
4 c. warm water
1/2 lb. salt pork
1 tbsp. chopped onion
1/2 c. honey
1 tsp. salt
1 tsp. dry mustard
1 tsp. vinegar

Soak washed beans in warm water for 3 hours. Cook over low heat in tightly covered saucepan. Cook for 1 hour and 15 minutes. Do not allow to boil. Drain the beans, reserve the liquid. Place salt pork in bottom of a bean pot; add beans. Cover with mixture of reserved liquid, onion, honey, and salt. Add mustard, vinegar, and boiling water, if needed, to cover. Place small pieces of salt pork on top, cover the pot. Bake at 325 degrees about 6 hours. Uncover during last hour of baking.
