PINEAPPLE BREAD 
1 c. crushed pineapple (8 1/2 oz. can, undrained)
1/2 c. dates, chopped
1 c. all-purpose flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. walnuts, chopped
3/4 c. brown sugar
3 tbsp. soft butter
2 eggs
3/4 c. whole wheat flour, unsifted

Mix pineapple and dates, set aside. Sift next 4 ingredients onto paper; add walnuts and whole wheat flour. In mixing bowl, combine sugar, butter and eggs; beat well. Stir in half of flour mixture, then pineapple and dates, then rest of flour. Mix, beating just until blended each time. Spoon into greased 9 x 5 x 3 inch loaf pan. Mix 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon. Sprinkle on top. Bake in 350 degree oven one hour or until done.
