PINEAPPLE BREAD | |
1 c. crushed pineapple, undrained (8 1/2 oz.) 1/2 c. raisins 1 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. salt 3/4 c. chopped walnuts 3/4 c. unsifted whole wheat flour 3/4 c. golden brown sugar, packed 3 tbsp. butter 2 eggs, unbeaten Preheat oven to 350 degrees. Grease 9 x 5 x 3 loaf pan. Mix pineapple and raisins, set aside. Sift next 4 ingredients, add walnuts and whole wheat flour, set aside. In mixing bowl, combine sugar, butter, and eggs; beat well. Stir in 1/2 flour mixture, then pineapple and raisins, then rest of flour, beating just until blended each time. Spoon into prepared pan. Mix 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon. Sprinkle on top. Bake 1 hour or until done. |
