PINTO BEAN PIE (MOCK PECAN) | |
1 1/2 c. sugar 1 tsp. allspice 1 tsp. cinnamon 1 tsp. nutmeg 1 1/2 c. cooked, mashed pinto beans 1 whole egg, beaten 2 egg yolks, beaten 1 tsp. vanilla 1 unbaked 9-inch pie shell Combine sugar and spices in a medium mixing bowl; mix well. Add beans, egg, egg yolks and vanilla; mix well until smooth. Pour into pie shell. Bake at 350 degrees for 15 minutes. Reduce heat to 300 degrees and bake 45 minutes or until set. |
