3 c. sweet potatoes, boiled & mashed
1 c. white sugar
1/2 c. milk
1/2 tsp. salt
1/2 stick melted butter
1 tsp. vanilla
2 eggs
Cinnamon (optional)

Peel, cube and boil sweet potatoes until very tender. Drain and beat with mixer until very fluffy. Add all other ingredients and mix well. Bake in 12"x12"x2" casserole at 350 degrees for 50 minutes.

TOPPING:

1 c. brown sugar
1 c. chopped pecans
1/3 c. flour
1/2 c. melted butter

Mix ingredients and bring to boil; spread on casserole. Return to oven until topping is bubbly. Marshmallows may also be used.
