FRAN'S PRIZE WINNING CHILI 
3 lbs. lean beef, coarsely ground
2 onions, chopped
2 cloves garlic, minced
1 chopped green pepper
1 bay leaf
1/2 tsp. oregano
2 pinches basil
1/2 tsp. cumin
1/2 tsp. freshly ground black pepper
1 tbsp. paprika
1 can tomato soup
1 (28 oz.) can tomatoes
6-8 tbsp. chili powder (Gerhardts)
1 tsp. Accent
2 cans kidney beans
Salt to taste (about 1 tbsp.)
1 1/2 tsp. sugar
1 1/2 qts. light beef stock
2 jalapenos, chopped

Sear meat in iron kettle until brown. Add onions, garlic, green pepper, bay leaf, oregano, basil, cumin, black pepper, paprika, jalapeno, sugar, chili powder. Cover, saute 5-10 minutes.

Add salt, soup, tomatoes, stock. Cook liquid down slowly 1 1/2 hours, stirring now and again. Add Accent and beans. Cook slowly additional 1/2 hour.
