PUMPKIN CHEESE ROLL 
3 eggs
1 c. white sugar
2/3 c. pumpkin
3/4 c. flour
1/2 tsp. salt
2 tsp. pumpkin spice
2 tsp. cinnamon
1 tsp. lemon juice

Beat eggs for 5 minutes. Add sugar gradually; stir in pumpkin and lemon juice.

Mix flour, baking powder, cinnamon, spice and salt. Fold dry ingredients into pumpkin.

Grease a 10 x 10 x 1 inch pan. Line pan with waxed paper. Bake at 375 degrees for 15 minutes.

Immediately, pull off wax paper after you turn out onto a towel sprinkled with powdered sugar.

FILLING FOR PUMPKIN ROLL:

1 c. XXX sugar
2 tbsp. butter
8 oz. cream cheese
1/2 tsp. vanilla

Beat all until smooth. Spread on cool cake and roll. Sprinkle with powdered sugar. Chill.

NOTE: If you use Libby's pumpkin with spices, omit spices and salt.
