ANTIPASTO 
1 head lettuce, washed, dried
4 tomatoes, quartered
1 (10 oz.) can tuna fish
1 (14 oz.) can artichoke hearts
8 slices salami
8 slices ham
8 radishes
8 black olives
Italian dressing
1/2 c. olive oil
3 anchovy fillets, mash
2 tbsp. lemon juice
Salt & pepper

Place lettuce on a large platter. Arrange the tomatoes, tuna fish, artichoke hearts, salami, ham and radishes on the lettuce. Sprinkle the olives, parsley and capers over all. Pour Italian dressing over the antipasto and allow to marinate for 1/2 hour before serving. Yields 8 servings.
