SANTA'S SEAFOAM 
3 c. sugar
1/2 c. light corn syrup
2/3 c. water
2 egg whites
1/4 tsp. salt
1 c. marshmallow cream
1/2 tsp. vanilla
1 c. chopped nutmeats

Combine first 3 ingredients in a heavy 2-quart saucepan. Stir over low heat to dissolve sugar. Bring to a boil, cover. Boil gently 3 minutes, uncover. Boil to a hard ball stage (265 degrees). Remove from heat.

In a separate bowl, beat egg white and salt until stiff but not dry. Add marshmallow cream and beat until stiff. Add hot syrup in a thin stream, beating constantly. Add vanilla, beat until dull and stiff enough to hold its shape. Fold in nutmeats. Drop by spoonfuls onto waxed paper.

I have and old seafoam recipe exactly like this one, but I have never added marshmallow cream before. I tried this recipe for the first time today...I never plan to use any other recipe for seafoam but this one. It is very easy to work with is so, so creamy and soft. I'm glad I found this recipe. I have used quite a few recipes from Cooks.com. Thank you very much.
