PAELLA 
2 1/2-3 lb. chicken
1/2 c. olive oil
Salt, pepper & pinch of saffron
Lg. onion, chopped
1-2 cloves garlic, chopped
Chicken stock & water
Lg. can tomatoes, chopped
Hot sausage, lobster, or any shell fish
Clean shrimp, unshelled clams or mussels
also fish fillets
Can peas, drained
Sm. can artichoke hearts
Sliced pimentos
1/2 c. rice

Brown chicken in oil and season. Remove chicken from pan and set aside. Add onion and garlic to oil and saute. Add rice, salt, pepper and saffron; mix. Pour on 3 cups of chicken stock and water. Simmer 20 minutes then add chicken and tomatoes, clams, sausage, etc. and whatever you have. Continue to simmer until chicken is tender and liquid has evaporated. Serve on very large platter and garnish with pimentos.
