ZUCCHINI IN TOMATO SAUCE 
4-5 med. zucchini
1 med. onion, chopped
3 cloves crushed garlic
4 tbsp. olive oil
1/2 tsp. oregano
Salt and pepper to taste
1 (28 oz.) can crushed tomatoes
2 tbsp. fresh parsley
5-8 leaves fresh basil

Scrub zucchini; do not peel. Slice thinly. Saute zucchini, onion and garlic in oil until zucchini are half cooked. Now add tomatoes, parsley, basil, oregano, salt and pepper. Simmer approximately another 10 minutes.

DO NOT OVER COOK THE ZUCCHINI! Delicious over rice. Serves 4-5.
