RED VELVET CAKE 
1 1/2 c. Wesson oil
1 1/2 c. sugar
2 eggs
1 c. buttermilk
2 1/2 c. self-rising flour
1 tsp. baking soda
1 tsp. vanilla
1 bottle red food coloring

Mix oil and sugar. Add eggs, one at a time. Add milk, flour, soda, vanilla, and food coloring. Sift flour at least 1 time before measuring. Add soda; sift again. Makes 3 layers. Bake at 350 degrees.

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box confectioners' sugar
1 c. pecans
1 tsp. vanilla

Cream the cheese; melt butter. Add sugar; beat well. Spread over cake.
