FRESH RHUBARB CAKE | |
1/2 c. shortening 1 1/2 c. sugar 1/2 tsp. salt 1 beaten egg 2 c. + 1 tbsp. flour 1 tsp. baking soda 1 c. sour milk or buttermilk 2 c. finely cut fresh rhubarb 1/3 c. sugar 1 tsp. cinnamon 1/3 c. chopped nuts Cream shortening and 1 1/2 cups sugar and add salt and egg. Add flour and milk, in which soda has been dissolved, alternately to creamed mixture. Stir in rhubarb. Spoon batter into a well greased and floured 9"x13"x2" pan. Combine 1/3 cup sugar, cinnamon and nuts. Then sprinkle over batter in the pan. Bake in a moderate oven, 350 degrees for about 45 minutes or until done. |
