VANILLA EXTRACT 
6 long vanilla beans
1 qt. vodka

Split vanilla beans open, and cut into pieces. Put into the bottle of vodka. Cap tightly, and place in a cool, dark place. Leave for 4 to 6 weeks, shaking the bottle occasionally.

Before using, sieve through a strainer lined with cheesecloth, rinse the bottle to remove residue, and pour back into the bottle. Add a whole vanilla bean and cap tightly until used.
