LEMON EXTRACT PECAN CAKE 
1 lb. butter
6 eggs
4 c. flour, sifted
1/2 tsp. salt
1/2 lb. candied pineapple
2 1/3 c. sugar
2 oz. lemon extract
1 1/2 tsp. baking powder
1/2 lb. candied cherries
4 c. pecans, chopped

Cream butter and sugar. Add eggs and lemon extract. Mix flour, baking powder and salt. Add to creamed mixture. Add candied cherries, pineapple and pecans. Pour into tube pan, line bottom with brown paper. Bake in a 275 degree oven for 2 hours. Can be glazed and nuts added.
