POTATOES WITH BOURSIN 
2 c. whipping cream
1 (5 oz.) pkg. Boursin
3 lbs. new red potatoes, scrubbed & sliced thin
1 1/2 tbsp. chopped fresh parsley

Preheat oven to 400 degrees. Butter 9"x13" baking dish or gratin dish. Stir cream and cheese over medium heat in saucepan until smooth. Arrnage half of potatoes in pan, generously sprinkle with salt and pepper. Cover with half of cheese; repeat. Bake until golden and tender, about 1 hour. Sprinkle with parsley before serving.
