POTATO GRATIN WITH BOURSIN 
2 c. whipping cream
5 oz. pkg. boursin with herbs
3 lbs. red potatoes, unpeeled, scrubbed and sliced thin
1 1/2 tbsp. chopped parsley

Heat oven to 400 degrees. Butter 9 x 13 with 2 inch sides. Stir cream and cheese in heavy large saucepan over medium heat until melted and smooth. Put 1/2 in baking dish slightly overlapping. Season with salt and pepper. Pour 1/2 cheese mixture over and repeat above. Bake until golden brown and tender approximately 1 hour. Sprinkle with chopped parsley and serve.
