AFRICAN PALAVER SAUCE 
1/4 c. oil
1 lb. spinach (1 box frozen chopped spinach)
1 onion
1 lb. meat (1 1/2 to 2 c. torn chicken)
1/2 tin tomato paste (I use 1 (6 oz.) can)
1/4 tsp. black pepper
1 3/4 c. meat broth
1 hot pepper (1/4 tsp. dried)
Salt to taste

1. Cook meat in 2 cups water until tender. 2. Heat oil and saute onions and pepper with some of the broth. 3. Add meat with the rest of the broth. 4. When dry-ish, add tomato paste. 5. When well blended, add spinach and salt to taste (and dried pepper if used). Simmer 8 minutes. Serve over rice. This recipe can be used for beef, chicken or fish.
