BRUNCH PIZZA | |
1 (8 oz.) pkg. crescent rolls or 1 (6 1/2 oz.) pkg. pizza crust mix 1 (12 oz.) pkg. frozen reg. pork sausage, thawed 1/3 c. sliced green onion 1/4 c. chopped green bell pepper 1/4 c. chopped red bell pepper 1 (4 oz.) pkg. shredded Mozzarella cheese 1 c. frozen hash brown potatoes, thawed 4 eggs 1/4 c. milk 1/4 c. snipped parsley 1/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. nutmeg 1/3 c. freshly grated Parmesan cheese On lightly floured surface, roll out crescent roll dough or pizza crust (mixed according to package directions) to fit a 12 inch pizza pan or 11 inch quiche pan. Press dough into bottom and side of pan forming a rim. Cook sausage in medium skillet until no longer pink, stirring to crumble. Spoon off and discard excess fat. Saute onion and peppers until soft, stirring occasionally. Spoon mixture into bottom of prepared crust. Sprinkle Mozzarella cheese over top, distribute potatoes over cheese. Beat eggs, milk, parsley, salt, pepper and nutmeg; pour over mixture in crust. Sprinkle with Parmesan cheese. Bake in a preheated 350 degree oven until set and lightly browned (40-45 minutes). Cut into wedges. Serve immediately. Serves 4. |
