HOMEMADE MANICOTTI 
4 eggs
1 c. water
1 c. flour
Oil
2 lbs. Ricotta cheese
3 eggs
Dash salt and pepper
1/2 c. shredded Mozzarella
Pinch parsley
1 lg. jar tomato sauce

Crepes: Combine 4 eggs, water and flour to get a smooth mixture. Fry in oil in a small skillet filling the whole bottom of skillet. Flip and fry after it starts to bubble and edges turn up. (Approximately 12 crepes.)

Filling: Combine 3 eggs, Ricotta cheese, salt and pepper and Mozzarella, parsley.

Put filling on inside of crepe and roll up the edges and put in baking dish. Cover with tomato sauce. Bake at 350 degrees for 25 minutes.
