PEACH BRAN MUFFINS | |
1 1/4 c. flour 1 tbsp. baking powder 1/2 tsp. salt 1/4 c. firmly packed brown sugar 1/2 tsp. cinnamon 1 egg 1 c. chopped peaches (peeled fresh or drained canned) 1 c. bran cereal 1/3 c. milk 1/4 c. vegetable oil Preheat oven to 400 degrees. Combine flour, baking powder, salt, sugar and cinnamon. Mix well and set aside. In large mixing bowl, beat egg slightly. Stir in peaches, cereal, milk and oil. Let stand 1 to 2 minutes until cereal is softened. Stir again. Add flour mixture, stirring only until combined. Spoon batter into greased or paper-lined 1/3 cup muffin tins. Bake for 18 to 20 minutes or until toothpick inserted in middle comes out clean. Serve warm. |
