MEAT LOAF SHIRLEY 
2 1/2 lbs. ground Mignon
2 1/2 lbs. ground NY prime
1 med. bell pepper, diced fine
1 med. red pepper, diced fine
1 lg. sweet onion, diced fine
3 serving spoons ketchup
1 tbsp. brown sugar
6 slightly beaten eggs
6 hard boiled eggs
2 tsp. salt
2 tsp. black pepper
2 tsp. ground garlic

In a large bowl mix all ingredients except hard boiled eggs. Shape meat into a long loaf; cut loaf in half lengthwise.

On bottom half, lay eggs end to end; cover with top half. Pinch halves together. Bake uncovered at 350 degrees for 25 minutes.
