BERKSHIRE APPLE PANCAKE 
3 tbsp. butter
2-3 apples, cored, peeled & sliced
1 banana, sliced
2 eggs, beaten
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
3 tbsp. sugar
1 1/3 c. milk
1 tsp. vanilla
1 tsp. cinnamon
Brown sugar
Maple syrup

Preheat oven to 450 degrees. Large iron skillet (10 inch diameter). Melt butter in skillet, remove from heat. Mix eggs, flour, baking powder, salt, sugar, milk, vanilla and cinnamon together to blend.

Lay 1/2 of the apple slices in bottom of skillet and pour 1/2 of the batter over apple slices, lay on balance of apple slices and the banana slices. Pour balance of batter on top. Sprinkle top of batter with brown sugar. Bake 20-30 minutes or until tester comes out clean.
