APPLE PANCAKE WITH SOUR CREAM 
2 apples, pared, cored and sliced 1/4 inch thick
2 tsp. butter
1 tsp. cinnamon
2 tsp. sugar
3 tbsp. flour
1/4 tsp. baking powder
Dash of salt
2 eggs, separated
3 tbsp. milk

In a 10-inch skillet with oven-proof handle, melt butter. Stir in cinnamon and sugar. Add apple slices and cook over low heat, about 5 minutes.

Meanwhile, preheat oven to 400 degrees. Combine flour, baking powder, salt, egg yolks and milk. Beat egg whites with 3 tablespoons sugar until they form soft peaks. Fold into flour mixture. Spread batter over apples. Bake for 10 minutes until golden and puffy.

Remove from oven, loosen edges with a spatula. Invert to flat large plate over skillet. Cut into wedges and serve with sour cream. Makes 4 to 6 servings.
