OATS AND APPLE PANCAKES 
1 c. quick cooking oats
1 c. all-purpose flour
3 tbsp. sugar
1 tbsp. baking powder
3/4 tsp. salt
1/2 tsp. cinnamon
1 1/3 c. milk
3 tbsp. vegetable oil
1 lg. egg
1 sm. apple, peeled, cored, and thinly sliced

In large bowl combine oats, flour, sugar, baking powder, salt and cinnamon. In a medium bowl beat milk, oil and egg until blended. Pour over dry ingredients and stir until moistened. Stir in apple slices.

Heat griddle over medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles appear on surface. Turn and cook until golden. Serve with syrup. Serves 4.
