APPLE PANCAKES | |
1 c. milk 1/2 c. whipping cream 1 c. all-purpose flour 1 tsp. baking powder 2 tsp. sugar 1 tsp. vanilla extract 4 eggs, separated Butter for cooking 4 apples, peeled, cored & cut into thin slices Confectioners' sugar 1. In a blender container put the milk, cream, flour, baking powder, sugar, vanilla and egg yolks. Blend until smooth. Strain to be sure there are no lumps. 2. Beat the egg whites until stiff, but not dry. Fold them gently into the batter. 3. Melt a little butter in a 9 inch frying pan. Pour in a thin layer of batter. As the pancake begins to set, arrange some of the apple slices on top, pushing them lightly into the pancake. 4. When the bottom is browned, turn the pancake over. To do this, slide the pancake out of the pan onto a flat plate, apple side up. Place the frying pan over the pancake and flip the plate and pan over so that the pancake is back in the pan, cooking side up. Finish cooking. 5. Repeat with the remaining batter and apples. 6. When serving, sprinkle the top with confectioners' sugar. Makes 4 servings. |
