SWEET POTATO CAKE 
2 c. flour
2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1 (11") pumpkin
1/2 tsp. salt
1 tsp. vanilla
4 eggs
1 c. vegetable oil
1 (18 oz.) can or 2 c. sweet potatoes
1 c. chopped nuts

Heat oven to 350 degrees. Grease and flour cake pan or tube pan. Beat all the ingredients in a large bowl on low speed for 3 minutes. Pour into pan. Bake until wooden toothpick inserted in center comes out clean. Bake 60 to 70 minutes. Cool 10 minutes. Remove from pan. Cool completely.
