SWEET POTATO POUND CAKE 
1 c. butter
2 c. sugar
2 1/2 c. mashed cooked sweet potatoes
4 eggs
3 c. flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground nutmeg
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 c. chopped nuts
1/2 c. flaked coconut
Icing

Cream butter and sugar; add potatoes, and beat until mixture is light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, salt, baking powder, soda, nutmeg, and cinnamon; stir into creamed mixture. Add vanilla and mix well. Stir in nuts and coconut. Spoon mixture into a greased 10 inch tube pan and bake at 350 degrees for 1 hour and 15 minutes or until cake tests done. While cake is still hot, spread with icing, if desired.
