SWEET POTATO POUND CAKE 
1 c. butter
2 c. sugar
2 1/2 c. cooked sweet potatoes
1 tsp. vanilla extract
1/2 c. pecans
1/2 c. coconut
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
4 eggs
3 c. plain flour
2 tsp. baking soda

Cream butter and sugar until fluffy; beat in potatoes. Add eggs, 1 at a time. Combine the flour, salt, baking powder, soda, nutmeg and cinnamon. Stir into creamed mixture. Add vanilla and mix well. Stir in nuts and coconut. Spoon into greased tube pan. Bake at 350 degrees for 1 1/4 hours. Combine the following icing ingredients and spread over the hot cake. 1 box confectioners' sugar Juice & rind of 1 lemon
