POTATO LATKES (PANCAKES) 
4 potatoes, peeled, grated
1 onion, grated
1 tsp. salt
1/4 tsp. ground pepper
1 egg, beaten
3 tbsp. flour
1/2 tsp. baking powder
Crisco shortening
Dash of nutmeg

Mix the potatoes, onion, salt, pepper, egg, flour and baking powder until very smooth, using food processor. Heat the shortening in a skillet. Drop the potato mixture into it by the tablespoonful. Fry until browned on both sides. Drain well. Serve with sour cream and/or applesauce.
