POTATO (LATKES) PANCAKES 
8 med. potatoes (peeled)
2 eggs, beaten
1/2 c. flour
1 tsp. salt
1 tsp. baking powder
2 med. onions, grated
1/2 pt. sour cream
1 c. applesauce

Grate potatoes; drain well. Grate in the onion (at least 4 teaspoons juice). Add the beaten eggs, salt and flour. Mix ingredients together. Drop by tablespoons into hot oil. Turn when brown and crispy. Blot on paper towels or brown paper bag.

Serve immediately with sour cream or applesauce, or for real "piggies" use both!

To keep warm, place directly on oven rack in warm oven, don't cover with foil, they'll get soggy.
