2 c. fresh or frozen, thawed & drained raspberries
2 tbsp. tapioca
1/2 c. unsweetened pineapple juice concentrate
Puree berries in a blender and press through a strainer to remove seeds. Combine all ingredients in a small saucepan and allow to sit for 5 minutes. Place saucepan over medium heat and bring mixture to a boil, stirring constantly. Continue boiling and stirring for 1 minute, then remove pan from heat and allow mixture to cool for 20 minutes before stirring well and spooning into small bowls of parfait glasses. Chill in refrigerator for 3 hours before serving. Yield 4 servings. Exchange 2 fruit.
