MEXICAN FRUIT CAKE 
2 c. plain flour
2 c. sugar
2 eggs, well beaten
1 lg. can crushed pineapple
2 tsp. baking soda

Mix cake ingredients and beat by hand. Place in sheet pan. Bake at 350 degrees for 40 to 45 minutes.

ICING:

1 lg. cream cheese
1 stick butter, softened
2 c. powdered sugar
2 tsp. vanilla

Mix icing ingredients and spread on hot cake.
