“LEMON REFRIGERATOR COOKIES” IS IN:

LEMON REFRIGERATOR COOKIES 
A Crisp Cookie.

1 cup (2 sticks) margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 tbsp. lemon juice
1 egg
4 cups sifted all-purpose flour
1/4 tsp. baking soda
1 tbsp. shredded lemon rind
1/2 cup finely chopped nuts

Cream together margarine and sugars. Add lemon juice and egg and beat well. Sift flour and baking soda together and add to creamed mixture. Add lemon rind and nuts and mix until well blended. Shape into 4 rolls, 2-inches in diameter and wrap each roll in waxed paper. Chill until firm.

Cut chilled rolls into 4-inch slices.

Bake on a baking sheet at 400°F for about 9 minutes, or until lightly browned.

Makes 7 (2-inch) cookies.
