PEACH PIE (One crust) 
COOKIE CRUST:

1 c. flour
1/2 c. butter
5 tbsp. powdered sugar

Cut together and press into pie plate. Bake 375 degrees 10-15 minutes until lightly browned.

1/2 c. water
1 1/2 tbsp. cornstarch
1 c. sugar
1 c. fresh peaches (peeled and mashed)
2 tbsp. butter
3 c. sliced peaches (about 5-6)

Combine water, cornstarch, sugar and 1 cup mashed peaches in saucepan. Cook and stir constantly until boiling. Boil one minute. Add butter and cool.

Slice 3 cups peaches into baked crust. Pour cooled filling over peaches carefully, covering peaches up to crust sides. Chill. Serve with whipped cream or ice cream.
