BREAD PUDDING WITH FRUIT OR NUTS 
2 c. torn dry bread
3 beaten eggs
1/2 c. light brown sugar
1 tsp. cinnamon
1 tsp. vanilla (or almond flavor)
1/2 to 1 c. raisins
1/2 c. apricots or chopped nuts (of desired)
1/2 c. thin apple slices (if desired)
butter-set aside

Preheat oven at 325 degrees (must be at least 325). Combine chosen ingredients. Dot butter on top. Stir after 20 minutes in oven. Place in casserole in a shallow pan of hot water in oven. Bake 3/4 hour to one hour. Center may be stiff soft, but cooked through, halfway to edges. Serve with any topping or lemon sauce.
