CHICKEN CREOLE 
1 cut up chicken
1 lg. green pepper, chopped
2 env. onion mushroom soup mix
1 (16 oz.) can tomatoes, chopped, including juice
1 c. uncooked rice
1 1/2 c. boiling water
4 oz. mushrooms, sliced

Wash chicken and put pieces in casserole dish. Bake at 450 degrees for 30 minutes. Remove from oven and discard all fat. Combine remaining ingredients. Put in casserole with chicken pieces on top. Cover with lid or foil. Reduce heat to 350 degrees and cook for an additional 35 to 40 minutes.
