CHICKEN CREOLE 
1 lb. chicken, cubed
Sm. onion
1 clove garlic
Half of a bell pepper
2 cans Rotel tomatoes
1 can chicken broth
2 c. Minute rice
Water
Cajun seasoning to taste

Chop onion, garlic and bell pepper (I use the food processor). In an electric skillet saute chicken, onion, garlic and bell pepper until chicken is done. Add Rotel tomatoes. Combine chicken broth and enough water to make 2 cups. Add to chicken. Add rice and Cajun seasoning (I use Tony's cajun seasoning). Cook until rice is done.
