CHICKEN MARENGO 
2 1/2 lbs. chicken
1 tsp. salt
1 Dash pepper
4 tbsp. olive oil
1 chopped onion
1/2 clove garlic, minced
1/2 c. chopped tomato
1/4 c. sherry
2 tbsp. flour

Cut chicken into pieces; sprinkle with salt, pepper and flour and brown in oil. Set aside. Saute onions and garlic in same pan. Add chicken and rest of ingredients, cover and simmer until tender about 30 to 40 minutes. White wine can be used for sherry.
