CODFISH | |
1 lb. box codfish Soak overnight in cold water. Drain and cut in pieces. 1/3 c. butter 2 lg. onions, chopped fine 1 clove garlic, chopped fine 3/4 c. finely chopped parsley 1 lb. 2 1/2 oz. can solid pack tomatoes or 1 (8 oz.) can tomato sauce Slowly cook onion, garlic and parsley in butter until onion is soft and yellow. Add cut up uncooked codfish and tomatoes or tomato sauce. Cover and simmer for 1 hour, stirring occasionally. Can add little salt and pepper if preferred, according to taste. Serve with mashed potatoes or polento. |
